In looking through some of my favorite vegetarian and vegan cooking sites, I realized that the reason everything is red and pink and heart-shaped is that Valentine’s Day is upon us. I’d forgotten all about it! At any rate, my accidental epiphany resulted in me finding some truly scrumptious-looking vegetarian and vegan Valentine treats that I am definitely going to be trying this week.
These are great recipes for a romantic Valentine’s Day dinner for the two of you, or to prepare as a gift for some extra-special vegetarian or vegan in your life. Something homemade and different beats out cardboard-textured chocolate hearts any day.
The most awesome recipes I found for vegetarian and vegan Valentine’s Day goodies were at one of my favorite foodie blogs, FitSugar.com.
I have one thing to say to you…3 Ingredient Vegan Chocolate Pie. The recipe is featured on FitSugar.com but is actually courtesy of the wonderful Lizzie Fuhr of CrazySexyKitchen.com. Lizzie is a cancer survivor who is one of the best advocates of nutritional medicine that I’ve ever come across.
This incredibly fast and simple recipe looks absolutely delicious, but only requires a vegan pie shell, non-dairy chocolate chips and some silken tofu. In the gorgeous picture that accompanies the recipe, the pie is decorated with fresh raspberries, but you could also use strawberries or even some marzipan flowers if you’re feeling artsy and have the time.
Also on FitSugar is a wonderful recipe for Dark Chocolate Fondue for Two, which is vegetarian, not vegan.
This one is definitely for me, though I suppose I ought to share it with my husband, given the title and the occasion.
